A recent study sheds light on the potential benefits of baked and roasted potatoes for people with type 2 diabetes, suggesting that they may aid in reducing waist size and controlling blood glucose levels.

While potatoes are often seen as unhealthy due to their common fried preparations, new evidence suggests that when baked or roasted, they may provide numerous health benefits. With over 4,000 varieties of potatoes available globally, these nutrient-rich tubers, when cooked appropriately, can help with weight management and blood sugar regulation.

The study, which involved 24 participants with type 2 diabetes, explored the effects of consuming a 100-gram serving of baked potato daily for 12 weeks. Each serving contained 20 grams of carbohydrates. Half of the participants avoided frying their potatoes, while the other half consumed an equivalent portion of white rice. The results revealed that those who ate baked potatoes experienced modest reductions in fasting blood glucose levels, waist circumference, and resting heart rate, as well as improved body composition compared to those who ate white rice.

Potatoes, particularly when baked or roasted, are rich in potassium, vitamin B6, folate, and dietary fiber, making them a heart-healthy food choice. These nutrients support digestive health, help manage weight, and promote overall cardiovascular well-being.

Experts noted that potatoes often receive a bad reputation due to their preparation method. Frying potatoes adds unhealthy trans fats and excess calories, which can negatively affect heart health. In contrast, baking or roasting potatoes without added fat provides a nutritious option for those with diabetes or anyone seeking to improve their diet.

This new research highlights the potential of baked potatoes as a heart-friendly carbohydrate for individuals managing diabetes, challenging conventional wisdom about the humble tuber and encouraging healthier cooking methods for better health outcomes.
